Vegie & Pearl Barely Risotto

how about Vegetable & Pearl Barely Risotto

Preparation 50-60 minutes (serves 6-8)


5x tomatoes, diced
1x onion, finely sliced
1x celery sticky, diced
1x zucchini, halved and sliced
1/2x crushed garlic
1/2 can dice tomatoes
1x cup frozen peas
1/2 broccoli, roughly chopped
2x carrots, diced
2x tablespoons extra-virgin olive oil
Salt and ground pepper to taste
4x cups vegetable stock or broth
3x cups water (or as required)
2x cups pearl barely
3x tablespoons freshly chopped basil
3x tablespoon parsley, finely chopped
1 1/2x tablespoons thyme, freshly chopped
1/2 chilli, finely chopped
1/2 cup grated Parmesan cheese


1. Boil water into a large pot; once water has boiled pour over pearl barely and let the barely soak for 30 minutes

2. In a pot heat 1 tablespoon, olive oil and saute garlic, onions, capsicum, chilli and celery until golden brown.

3. Drain the barely and add to the onion, garlic, stirring well

4. Gradually add 4 cups stock to the barely and stir well

5. Add all other vegetable to stock and barely and allow simmering for 1 hour on medium heat. Add water as required and stir continuously.

6. Add salt, pepper and herbs.

7. Serve with grated Parmesan cheese on top (optional)
